Spaghetti Squash

This delicious meal is easy to make, it takes about an hour, but most of that is oven time, when you can be doing other things. This is simply the contents of half a Spaghetti Squash, a Chorizo Sausage and Spaghetti Sauce.

 

Recently I have had a couple requests for recipes, since I am always posting pictures of food on FaceBook. So this is my first attempt. I chose an easy meal for my convenience as a pictorial essay and to demonstrate how easy it can be to eat well, for those of you who are new to this style of eating.

This is a Paleo meal that is so simple a man can do it.

Ingredients:

  • 1 Spaghetti Squash
  • 2 Tablespoons Butter
  • 2 Tablespoons Coconut Oil
  • 2-4 Sausages (Italian, Portugese, Hot, Sweet, it doesn’t really matter)
  • Pasta Sauce of your choice (can be quality jarred sauce or homemade)
  • Preparation Time: One Hour
  • Serves two adults, it’s easy to double or triple without taking much more time to prepare.

Cut the squash in half, and scrape the seeds out. Bake cut-side down, on a parchment paper covered baking sheet for 40 minutes at 400 degrees. Remove from the oven, flip open-side up, add a tablespoon of Pasture-Fed Butter and let cool. Then scrape the cooked squash into an individual serving bowl for each half.

For meat, I used some locally grown Chorizo sausage we bought at a Farmer's Market in Groton this fall. I browned the meat in Coconut Oil until it was cooked all the way through. You can use any meat you choose. We;ve done it with shredded chicken, leftover chili, steak tips. Use you imagination.

If you like making your own sauce, be my guest. There are only two of us, so we keep it simple and always have a few jars of sauce in the pantry cupboard. This particular brand of sauce is 100% Paleo friendly, it doesn't have any sugar, sweeteners or preservatives it it. I simply pour the contents in a large-mouth measuring cup and heat in the microwave for a few minutes until it is hot. Then I ladle it over the squash. A dash of Black Pepper, Salt, Oregano, Red Pepper Flakes or whatever excites your tastebuds finishes off the dish.
