This morning I found a recipe for Sweet Potato Waffles on Pinterest. BUT, I didn’t have most of the ingredients, so I improvised. I was pleased with the results.
Ingredients:
- 1.5-2 cups of shredded sweet potato ( mine weighed in at 350 grams)
- 2 eggs
- 1/4 cup of Kodiak Protein Power Cakes (or Almond Flour)
- Cinnamon to taste.
Instructions:
Shred Sweet Potato with a food processor or with a large grater. Mix all ingredients in a large bowl and stir well. Divide the blend into two equal size portions. Place one portion in a pre-heated waffle iron. (I spray the surfaces with Coconut Oil first.) This mixture will not flow like waffle batter, you will have to spread it across the iron. Close it up and cook about 8 minutes. Then cook up the second half. (If you’re cooking a bunch, place finished ones on a platter in a 200 degree oven to keep them warm.)
I served with fresh berries, Kerry Gold Butter and dark maple syrup. I also had two sunnyside-up eggs on the side.
I loaded the ingredients into MyFitnessPal and came up with the following estimate per serving:
- Calories: 275
- Carbs: 45
- Protein: 13
- Fat: 5
Of course when you add butter and syrup the numbers add up. Enjoy, and be sure to experiment.
